Kaeng Hua Tan is one of the Lao recipe that you should try. It is soft bitter taste, but very yummy. Other wise, it is not easily to find in the restaurant because it is traditional dish
Ingredients
10 young sugar palm fruit
Pork born
Soaked sticky rice
Yanang juice
7-10 Lemon basil
Spring Onion green 7-10 stalk
Lemon grass 3 cloves
5-7 Chilies
Method
Peal sugar palm fruit and chop only its head (soak it by water in order to make beautiful color)
Heat water in the pot, boil head of sugar palm fruit for 1 hour or until it decrease bitter. Then, transfer it to the bowl and leave it cool.
Heat the pot, add Yanang juice. when the pot heat, add lemongrass (Chopped lemon grasses) and pork born.
when the pork was soft, add head of sugar palm fruit. Boil for 10-15 minutes
Add chilies and pounded soak sticky rice . Then, adjust taste and add herbs such as lemon basil and spring onion green in order to increase nice fragrance of menu
Transfer to the bowl, ready for serving
Noted:
You would better to put on the gloves when chop the sugar palm fruit if not, your hand will be dirty
You can grill sugar palm and serve with Lao suace (Jeow) or Pon Pah
