Steamed fish with lemon (Pah Nueang Mark Naow)

Steamed fish with sour sauce is considered as a simple but yummy Lao dish

Ingredients

  • 1 lemon
  • ½ cup of coriander, chopped
  • 1 stalk of lemongrass, chopped
  • 5 green and red chilies
  • 2 cloves of garlic
  • 1 tablespoon of fish sauce
  • 1 ½ teaspoon of salt
  • 2 teaspoons of sugar
  • 1 large fish (1 kg)
  • 1 tablespoon of boiled water

How to make the sauce

  1. Put the salt, the chilies, the garlic, and the sugar into a mortar and pound the ingredients. 
  2. Add the lemon and the fish sauce and pound it all again. Add a little water if the mixture stews.
  3. Taste and adjust the flavour if needed. 

How to steam the fish

  1. Clean the fish. Cut through the skin, but do not cut into the flesh. 
  2. Put some salt (1/2 teaspoon) and the lemongrass on top of the fish and put it on a plate.
  3. Place the plate inside a pan and steam the fish for about 15-20 minutes. You can also use a microwave instead. 
  4. When the fish is steamed, remove it from the pan or microwave and garnish it with the sauce and the coriander. 
  5. The fish is ready to be served.
