{"id":4781,"date":"2021-06-14T00:00:00","date_gmt":"2021-06-13T17:00:00","guid":{"rendered":"https:\/\/phakhaolao.la\/story\/pureed-frog-pon-kop\/"},"modified":"2024-10-22T22:33:10","modified_gmt":"2024-10-22T22:33:10","slug":"pureed-frog-pon-kop","status":"publish","type":"story","link":"https:\/\/phakhaolao.la\/en\/story\/pureed-frog-pon-kop\/","title":{"rendered":"Pureed frog (Pon Kop)"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>2 frogs (can be grilled frog)<\/li>\n<li>3-5 egg plants<\/li>\n<li>3-5 shallots<\/li>\n<li>5 chilies<\/li>\n<li>7-10 ginger leaves<\/li>\n<li>3\u00a0\u00a0Kaffir Lime leaves<\/li>\n<li>2 cloves for lemon grass<\/li>\n<li>Padek (Fermented fish)<\/li>\n<\/ul>\n<p>Method<\/p>\n<ol>\n<li>Put the water and Padek in a medium pot, and then bring to the boil.<\/li>\n<li>Wash the frog\u00a0inside and out; Then,\u00a0place in the boiling liquid.<\/li>\n<li>Put lemongrass, leaves of Kaffir Limes\u00a0in boiling liquid and covered for 2 minutes.<\/li>\n<li>Place frog and eggplants in the boiling liquid and covered for 15 minutes. when\u00a0it was cooked, leave it for cooling<\/li>\n<li>Grill the shallots and chilies over a gas or charcoal fire until blackened.\u00a0<\/li>\n<li>When cool, remove most of the blackened skins. Leaving on a little will enhance the final flavor. Put these ingredients into a mortar and pound to a coarse paste (or pulse in a small food processor).<\/li>\n<li>Add frog and eggplants to mortar. Pound together, adding a few tablespoons of the fish broth until the mixture has the consistency of runny porridge. Taste (Add salt or fish sauce if required)<\/li>\n<li>Stir in the chopped ginger&#8217;s leaves, taste and adjust.
