{"id":6220,"date":"2019-06-07T00:00:00","date_gmt":"2019-06-07T00:00:00","guid":{"rendered":"https:\/\/phakhaolao.la\/story\/chilli-paste-awng-with-pork-nam-phik-awng-sin-moo\/"},"modified":"2024-10-22T22:35:42","modified_gmt":"2024-10-22T22:35:42","slug":"chilli-paste-awng-with-pork-nam-phik-awng-sin-moo","status":"publish","type":"story","link":"https:\/\/phakhaolao.la\/en\/story\/chilli-paste-awng-with-pork-nam-phik-awng-sin-moo\/","title":{"rendered":"Chilli paste awng with pork (nam phik awng sin moo)"},"content":{"rendered":"<p><strong>Ingredients<\/strong><br \/>\n\u2022\u00a0\u00a01 small head garlic cloves, peeled and chopped\u00a0<br \/>\n\u2022\u00a0\u00a04 T vegetable oil\u00a0<br \/>\n\u2022\u00a0\u00a01 T fermented chilli soybean paste (see Ingredients section for substitutes)<br \/>\n\u2022\u00a0\u00a01 C \u00a0(225g\/8 oz) pork, minced (optional)<br \/>\n\u2022\u00a0\u00a0\u00bd t sugar<br \/>\n\u2022\u00a0\u00a01 T thin soy sauce chilli powder to taste (optional)<br \/>\n\u2022\u00a0\u00a02 large tomatoes, chopped water or stock to adjust mixture to a thick salsa consistency<br \/>\n\u2022\u00a0\u00a01 small bunch spring onions, greens only, chopped finely\u00a0<br \/>\n\u2022\u00a0\u00a01 T coriander, chopped finely (optional)<br \/>\n\u2022\u00a0\u00a01 bunch Chinese flowering cabbage (and slices of pumpkin and gourd [optional])\u00a0<br \/>\n\u2022\u00a0\u00a0Water to cook vegetable accompaniments<\/p>\n<p><strong>Method<\/strong><br \/>\n1.\u00a0\u00a0Heat the oil in a hot wok. Toss in the chopped garlic and stir fry briefly. Remove the garlic if it is browning too fast. Add the fermented soybean paste to the oil and fry, squishing the paste down so it cooks, but does not burn or stick. \u00a0Add the minced pork or tofu as well as the garlic if it has been set aside. Add the sugar, soy sauce and tomato. Flavour with chilli powder if desired.<br \/>\n2.\u00a0\u00a0Simmer, stirring occasionally, until the meat and tomatoes are cooked and integrated with the other ingredients into a rich, chunky sauce. Add water or stock to thin if necessary. Taste and adjust seasoning.<br \/>\n3.\u00a0\u00a0When finished, stir in the onion greens and coriander.
