{"id":6364,"date":"2019-05-21T00:00:00","date_gmt":"2019-05-21T00:00:00","guid":{"rendered":"https:\/\/phakhaolao.la\/story\/giant-water-beetle-jeow\/"},"modified":"2024-10-22T22:35:43","modified_gmt":"2024-10-22T22:35:43","slug":"giant-water-beetle-jeow","status":"publish","type":"story","link":"https:\/\/phakhaolao.la\/en\/story\/giant-water-beetle-jeow\/","title":{"rendered":"Giant water beetle jeow"},"content":{"rendered":"<p><strong>Ingredients<\/strong><br \/>\n\u2022\u00a0 2 water gourds, tea cup-size<br \/>\n\u2022\u00a0 1 small head garlic\u00a0<br \/>\n\u2022\u00a0 4 giant water beetles<br \/>\n\u2022\u00a0 10 small green chillies for a hot jeow, threaded on toothpicks (or 3 big green chillies for a milder jeow)\u00a0<br \/>\n\u2022\u00a0 1\u00bd t salt\u00a0<br \/>\n\u2022\u00a0 1 t soy sauce (or to taste)\u00a0<br \/>\n\u2022\u00a0 \u00bc t sugar<br \/>\n\u2022\u00a0 3 T coriander leaves, chopped\u00a0<br \/>\n\u2022\u00a0 1 cucumber, as an accompaniment<\/p>\n<p><strong>Method\u00a0<\/strong><br \/>\n1. Cut the water gourds into quarters and steam about 15 minutes until tender.<br \/>\n2. On a fine wire grill, arrange the garlic, water beetles and chillies. Grill until the beetles are crispy and the other ingredients are well-roasted, but only lightly blackened.<br \/>\n3. Finely mince the beetles. Mince the big chillies separately if using them. Peel the garlic.\u00a0<br \/>\n4. In a mortar, add the salt, roasted garlic and chillies. Pound roughly, and then add the minced beetles. Pound for 3 minutes. Add the sugar, soy sauce and the chopped coriander leaves. Stir to mix.<br \/>\n5. Transfer to a small bowl.
