Chili powder is a popular seasoning used in many Lao dishes, including larb, chili dips, soups, and other traditional foods. Making it at home is simple and allows you to keep it ready for everyday cooking.
Ingredients:
- 100 g dried chilies
- 1 teaspoon of salt
Instructions:
- Choose clean, dried chilies that have no mold.
- Remove the stems. Dry-roast the chilies in a pan over low heat until they become fragrant and crispy. Be careful not to burn them.
- Let the chilies cool for a few minutes.
- Pound or grind the chilies with the salt until they reach your preferred texture.
- Store the ground chili powder in a clean, dry jar with a tightly closed lid.
Tip: Pounding the chilies by hand with a mortar and pestle can help bring out their aroma.
