Duck meat is a good source of protein, which helps the body build and repair muscles. This traditional Lao dish combines duck with aromatic herbs and spices to create a flavorful meal.
Ingredients:
- 1 whole duck (about 1-1.5 kg)
- 2-3 tablespoons fish sauce
- 1 teaspoon salt
- 1-2 teaspoons seasoning powder
- ¼ teaspoon sugar
- 5-6 cloves garlic
- 3-4 shallots
- 1 piece of galangal (optional, to taste)
- 2 stalks lemongrass
- Chilies, to taste
- 3-4 kaffir lime leaves
- 2-3 sprigs coriander
- 2-3 spring onions
- A little cooking oil
- Water, as needed
Instructions:
- Clean the duck thoroughly and cut it into bite-sized pieces.
- Pound the garlic, shallots, galangal, lemongrass, and chilies until they are finely crushed.
- Heat a little cooking oil in a pot.
- Add the pounded herbs and spices. Stir-fry until fragrant.
- Add the duck pieces and stir-fry with the herbs. Season with salt, fish sauce, seasoning powder, and sugar. Add enough water to help the duck cook and become tender.
- Cover and simmer for about 20–30 minutes, or until the duck is tender and fully cooked.
- Add the sliced spring onions, coriander, and kaffir lime leaves. Simmer for another 2–3 minutes to release their aroma.
- Check that the duck is fully cooked and tender. Taste the broth and adjust the seasoning as needed.
