Stir-fried chicken giblets with kaffir lime leaves is a flavorful dish with a fragrant aroma and a moderate level of spiciness. It is easy to prepare using simple ingredients and is delicious when served with hot sticky rice.
Ingredients:
- 500 g chicken giblets (such as liver, gizzard, and heart)
- 5-8 kaffir lime leaves
- 2 shallots
- 4-5 cloves of garlic
- 5-10 chilies, as desired
- 2 tablespoons cooking oil
- A little salt
- ½ teaspoon seasoning powder
- 1 tablespoon oyster sauce
- 2-3 tablespoons water
Instructions:
- Wash the chicken giblets thoroughly and cut them into bite-sized pieces. If using liver, cut it into slightly larger pieces than the other parts because it cooks quickly.
- Slice the shallots, garlic, and chilies. Cut the kaffir lime leaves into thin strips.
- Heat the oil in a pan. Add the garlic, chilies, and shallots, and stir-fry until fragrant.
- Add the prepared chicken giblets and stir-fry until cooked. Add the oyster sauce, salt, and seasoning powder. If the mixture becomes too dry, add a little water.
- When the giblets are almost cooked, add the sliced kaffir lime leaves. Stir-fry for another 1–2 minutes. Do not cook them for too long, as this can reduce their fresh, fragrant aroma.
- Taste and adjust the seasoning as needed. Serve hot with sticky rice.
